Steps

First-time pairing with a Nintendo Switch uses the controller's mode switch set to S and the PAIR button on the controller body. Power on with START, hold PAIR for 3 seconds to enter pairing mode, then add it from Change Grip/Order. After the first pairing it auto-reconnects whenever you lift it off the charging dock.

FAQ

Where is the PAIR button?
It is the small recessed PAIR button on the top edge of the controller, next to the USB-C port. The dock has its own pair button too.
It won't show up in Change Grip/Order.
Make sure the mode switch is on S and the status LED is fast-blinking. If not, hold PAIR 3s again to re-enter pairing mode.
